Roquefort-sur-Soulzon: 2,000 years of cheese history
Nestled at the foot of the Combalou rock, the village of Roquefort-sur-Soulzon hides in its cliff the natural cellars where Roquefort matures — the very first French cheese to be awarded an AOC, back in 1925. The secret: the fleurines, natural faults that ventilate the cellars at 8°C and 95% humidity all year round, and Penicillium roqueforti, the endemic fungus that gives the cheese its blue-green veining.
Visiting the cellars: the programme
- Caves Société — the most complete tour, with immersive staging and a sound and light show in the cellars. Tasting of the different ranges at the end.
- Caves Papillon — a free, more intimate tour, with a film on the cheese-making and a tasting.
- Caves Gabriel Coulet — the small family house, beneath the village square.
- 'Sentier des Échelles' trail — for walkers, a climb to the top of the Combalou with panoramic views over the village and the Larzac.
- Producers' market — Wednesday mornings in season.
Good to know: it is 8°C in the cellars even at the height of summer — slip a jumper into your bag. And keep some room in the cool box for the way back: Roquefort bought at the cellar is best enjoyed that same evening on your mobile home terrace.
On the road to Roquefort: the Larzac
The road between Millau and Roquefort skirts the Larzac plateau, land of the Templars and Hospitallers. A few kilometres away, don't miss La Couvertoirade, a fortified village listed among the Most Beautiful Villages of France, or the Templar towns of La Cavalerie and Sainte-Eulalie-de-Cernon. Enough to turn the half-day cheese trip into a full day out.

Three houses open their cellars to the public: the Société cellars (the biggest tour, with immersive staging), the Papillon cellars and the Gabriel Coulet cellars. All end with a tasting. Allow about 1 hour per visit.
